Soft and Chewy Lemon Cookies - Averie Cooks
These soft and chewy lemon cookies are packed with big, bold lemon flavor for all you lemon lovers! They're soft, chewy and not at all cakey!

So I tried this recipe for lemon cookies today, because I love lemons and it seemed like a fun thing to do for the beginning of summer. It was really good! As advertised, they are very soft and chewy (and delicious).

It takes a little while, particularly if you don’t have any lemon zest on hand, but they’re cookies worth making if you have some time to spare.

(Actually, though, the recipe calls for two whole tablespoons of lemon zest! I didn’t have enough lemons for that, so after I’d taken all the zest from four lemons I stopped and just used what I had. So my cookies are probably not quite as lemony as the original, but they’re still good.)

I had them with my family with a dusting of sugar on top and some chilled blueberry-lavender tea!

I would rather choose To love and lose - Than to never have loved you.

me

I wrote this a long time ago, but I went to see How to Train Your Dragon: The Hidden World today, and this suddenly seemed very appropriate.

Love - real love, the kind that lights your chest up and rushes in your throat and is selfless - is always worth it. We lose everything in the end. Some things we lose sooner than others, and some losses are more painful than others. But the choice to love is always worth it, even when it hurts.

A 2,500 Year Old Ancient Olive Tree On The Island Of Evia Was Destroyed Today In The Ongoing Wildfires

A 2,500 year old ancient olive tree on the island of Evia was destroyed today in the ongoing wildfires consuming the region. The ancient tree was located in the olive grove of Rovia, and was such an enduring symbol of the landscape that the ancient geographer and philosopher Strabo featured it in his writings.

The tree was large, with a trunk so wide ten people could fit along its diameter. The tree was fertile with olives all the way until it fell victim to the wildfire.

The tragic loss of the Evian tree was posted to Twitter by Apostolis Panagiotou, and the evocative image quickly gained over a thousand likes, with many Greeks leaving responses mourning the impact of the fires.

Our world does not welcome wild things.

As a zoology student, this is a brutal truth I must face. We slaughter keystone predators, leaving ecosystems to rot, then ponder why we are so overrun by the animals they hunt. We destroy forests, jungles, prairies and marshlands, then wonder why these pests dare encroach on our land.

We hunt rare creatures for their tusks, for their horns, for their skin, for their bones, forcing those that remain onto reserves, culling them when their populations grow beyond our control. Our highest-ranking political figures publicly delight in murdering endangered species for mere thrill of the hunt. If a creature is fierce, or frightening, or mysterious, or beautiful… we kill it.

This is why How to Train Your Dragon: The Hidden World is important. Grimmel is a trophy hunter. He kills dragons for the fun of it. Because Night Furies are beautiful and rare and dangerous and the world heralds him as a hero for it. He doesn’t need another reason for it, anymore than any of the trophy hunters of our world need a reason for shooting an elephant and proudly posing with its bloody tail other than it boosts their egos.

“Our world doesn’t deserve you…”

Our World Does Not Welcome Wild Things.

…because our world destroys all that which is fierce and beautiful and wild. So until the day comes when mankind stops desecrating, polluting, and exploiting the natural world we are meant to protect, I hope the dragons stay hidden, where man cannot reach them.

Honestly the biggest disappointment I had researching ABC was that medieval authors did not, in fact, see the creatures they were describing and were trying their best to describe them with their limited knowledge while going “what the fuck… what the fuck…”

My sister just said “We’re all gonna die because people are stupid and want to go to college and have parties” and I looked over at her and said “We’re all gonna die because corporations value profit over lives - and so does the government”
